In 2000, the Education Department of the Autonomous Region of Madrid (government institution which runs the school meals service in non-university state educational centers) considered necessary to plan and regulate the nutritional conditions of menus served in schools. The Spanish Nutrition Foundation (FEN) and the Department of Nutrition of the Complutense University in Madrid were responsible to implement the regulations and follow up of the participating schools. The excessive consumption of salt in Spanish diet and also in the EU is nowadays a priority problem of public health, mainly in young population. Therefore, it was decided to include in the Schools Meals Programme, sodium and chlorides analysis for the school meals served during 2009-2010 academic year.
